Spinach Pasta Recipe


This has nothing to do with knitting, although it is colorful.

I had a craving for spinach the other day, so I experimented and invented a pasta sauce that actually turned out to be quite tasty, as well as colorful:

1/4 cup Virgin Olive Oil
1 garlic clove, chopped
6-8 mushrooms, sliced
4-6 plum tomatoes, chopped
1/2 bag fresh spinach
1 tsp thyme
salt&pepper to taste

Heat the garlic, thyme, mushrooms, and tomatoes in a skillet (medium heat) until the tomatoes fall apart. Throw in the spinach and cook just long enough for the spinach to get soft.  Add salt & pepper to taste.

Serve over pasta with loads of freshly grated parmesan cheese.
